Versus Juliette Child with all you guys but I know my way around the kitchen. Tonight I made the yummiest thing I have had in a while…Chicken Fajita pizza. It is s pampered chef recipe and I will post it tomorrow when I am downstairs. I have also tried a Rachel Ray recipe – Cowboy spaghetti (that is on the food network site.) Yummo. (wink wink!)
So besides basking in my domestic responsibilities in cooking – I recently ditched one because my hubby bought me a Roomba. The kids decided to call it Peter (I have no idea why.) I call it Peter, Peter, dog hair eater. Jon wanted to buy it for me for Christmas but after a good you better be joking me kind of look, I suggested our anniversary present. I love this thing.
Elsewhere in the home, Rachel has learned how to climb the stairs without any help. Yeah, that was a little crazy when we realized she could do that when she was half way up the stairs without us knowing! Seth has earned some badges for cub scouts and Jon is enjoying some bonding time when they go. Audrey is still a dancing machine – well trying to be. 🙂
I am still moving my body outside…sometimes running. I have been having some health issues that I am having to battle but determination is strong in me so I will continue to be out there until I can’t! I might have to switch over to the walking team, which would totally piss me off, but sometimes I guess I am not in control.
So to finish the title of this post – I have nothing against Sandra Lee in semi-homemade on the food network. I actually really enjoy that she has cocktail time in every show – even with a kid party theme. Some of the things she creates – my kids loved. I tried one of her homemade fish sticks using cod, egg whites, a ranch packet mixed in with the flour and crushed Wheatabix. My kids and Jon loved it. (Didn’t reheat well.) I am nowhere near trophy wife like her – I prefer the natural funness of Rachel Ray and her love of eating. So I am done ranting I guess…Hope all is well with everyone! Okay – here is the recipe taken from Pampered Chef All the Best :
1 medium green bell pepper
1 medium red bell pepper
1 medium onion
2 boneless, skinless chicken breast (4 ounces each)
2 packages (10 ounces each) refridgerated pizza crust (I used Pillsbury)
1 teaspoon vegetable oil, divided
1 teaspoon chili powder
1/2 teaspoon ground cumin
1 garlic glove (I used 2)
1/4 cup thick and chunky salsa (I used black bean and corn salsa)
2 cups (8 ounces) shredded Colby and Monterey jack blend, divided (I used what I had on hand – cheddar and jack mix)
2 tablespoons snpped fresh cilantro (did not have/use)
Sour cream for garnish if desired
Preheat oven to 425. Cut bell peppers and onion into 1/2 inch thick wedges.
Cut chicken crosswise into thin strips
Those of you with a Pampered Chef pizza stone – break that out and lightly flour it. Unroll both packages of pizza dough and arrange side by side, shapingit into a circle. Use roller to edge of stone and press seams of dough together.
Heat stir fry skillet over high heat. Add 1/2 teaspoon of oil and chicken; stir fry 2-3 minutes or until chicken is no longer pink. Remove from skillet. Add remaining pil, bell peppers, onion and seasoning to skillet. Press garlic over vegetables. Stir fry 1-2 minutes until vegetables are crisp-tender. Remove skillet from heat; stir in chicken and salsa.
Sprinkle half of cheese evenly over crust. Arrange chicken mixture over cheese. Sprinke remaining cheese over chicken mixture.
Bake 18-22 minutes or until crust is golen brown. Remove from oven and sprinkle cilantro over pizza; let stand 10 minutes. Cut and serve using sour cream and additional salsa if you like.
